I will report on recent experiments performed at LENS with ultracold quantum gases of two-electron Yb atoms. In particular, I will focus on the experimental realization of multi-component 1D liquids of 173Yb fermions trapped in a 2D optical lattice. These atoms are characterized by a large nuclear spin I=5/2 and highly-symmetric interactions, allowing quantum simulations of systems with SU(N) interaction symmetry. By controlling the number of spin components N, we have studied how static and dynamic properties of strongly-correlated 1D fermions change with N, evidencing intriguing effects caused by the interplay between interactions and quantum statistics.
